8 Ultra-Portable Picnic Side Dishes

Summer is the perfect time for picnics and outdoor cookouts. Whether you’re planning on grilling out in your own backyard, or picnicking in the park with friends, there’s one essential you can’t forget: good food.

Bringing a dish to a potluck-style picnic doesn’t have to be an ordeal. If you have a few minutes and some simple ingredients you can whip up one of these 8 ultra-portable picnic side dishes for your next get together. Everything on this list can be served chilled and with the time you save you’ll have time to pick up the perfect wine or beer en route.

Salsa

1) Blueberry Corn Salsa

Fresh salsa is a great way to start off the meal while everybody is still socializing. We like this corn and blueberry version because provides the perfect combination of sweet and spicy. Salsa on its own is pretty basic, so step it up a notch by making your own tortilla chips. This is surprisingly easy and don’t forget to season them with salt or even a little chili powder if you like more heat.

2) Mango Salsa

This sweet salsa is and unexpected take on what people usually expect from salsa. Our recipe is both sweet and just a little spicy thanks to a few jalapenos. To make it, finely chop some mango and mix in a bowl with chopped cilantro,  jalapeno,  and lime juice. Salt and pepper to taste.

3) Three Bean-Quinoa Salad

This salad will surprise you with its delightful flavor and taste, giving you a boost of energy and protein from the quinoa and chickpeas.  We recommend pairing it with a Belgian Witbier, the citrus and coriander aromas of which will complement the salty and tangy flavors of the feta.

4) Blueberry Corn Chicken Salad

This chopped salad from Britanny of the blog Eating Bird Food comprised of colorful seasonal fruits and veggies that will give you a healthy kick for your day out. A dose of sweetness from the buttery corn working in perfect harmony with the hint of tanginess supplied by the blueberries will have you reaching for seconds.

Pasta

5) Grilled Vegetable Bowtie Pasta with Cilantro-Pepita Pesto

Pasta at a picnic – it just makes sense! This colorful meal is packed with a vibrant combination of mushrooms, onions, and peppers. Grab a light lager to go with the fragrant pepita pesto sauce. This refreshing beer is slightly tart and will add depth to this light pasta dish.

6) Orzo and Asparagus Toss with Lemon-Dill Vinaigrette

The tangy herb vinaigrette with orzo is a great side dish for your picnic, and you’ll savor the tart and juicy hints of citrus. The coriander aroma of a Belgian Witbier will nicely complement the light citrus dressing.

7) Tangy Cabbage Slaw

A creamy and tangy coleslaw can make for either a great side, or try putting some on your pulled pork sandwich or burger for a little extra zing!

8) Chickpea + Cucumber Salad

This side can be paired with just about any main dish at the picnic. Crisp cucumbers and mint complement the nuttiness of the chickpeas for a side that is balanced and bright.
