Let tonight’s dinner be your passport to fun with a themed destination. We curated a dinner experience inspired by Mexico to finish up our (faux) summer abroad. With mariachi bands, street tacos, and fiesta colors, you can build a fun dining experience in your own kitchen. Here are a few meal ideas for a mexican-inspired staycation.What to Eat
Our menu has so many perfect options for this staycation; it was really difficult to choose only three! Here are our top picks for your voyage to Mexico this week.1. Vegetarian Tacos are perfect if you are planning your staycation for #tacotuesday. If you want to add protein to these already stuffed tacos, choose from our a la carte protein options like ground chuck, chicken or steak.
2. Our Turkey Taco Bowl may sound a bit unorthodox, but it does not disappoint. This one-bowl meal also includes homemade tortilla chips, something you may not have attempted before. Don’t worry, it’s easy, so pour yourself a Syrah-based rosé and get ready to chow down.
3. How could we make Mexican inspired recommendations without our namesake meal, the TERRAchilada? This is a great dinner option if you are sticking to a gluten-free diet, and the salsa verde includes all kinds of good (and good-for-you) ingredients like spinach and jalapenos.
What to Drink
Rachel from Coconut & Lime designed a spicy avocado margarita to pair with our Chicken and Avocado Goat Cheese Tacos, but we think it would go well with just about any meal on this staycation! Since the drink includes avocados, too, you can feel good about drinking it. Here is the full recipe from her blog:
Ingredients (Serves 2):
4 oz tequila
1 jalapeño, halved
1 avocado, cubed
1 oz Patrón Citrónge
2 tbsp lime juice
1 c ice
Soak the jalapeño in tequila for 1 hour, then muddle it. Strain out the jalapeño and discard it. Add the infused tequila and remaining ingredients to a blender. Pulse until smooth. Serve immediately.
If you are feeling a bit more adventurous, try The Honey Habarita by Belle Isle Spirits. It combines Belle Isle Honey Habanero Premium Moonshine with lime juice and a salt rim. The moonshine is made with all natural honey and real habañeros giving it a subtle, yet bold flavor. Salud!

Set The Table
When choosing your table setting, make everything bright. Consider mixing colors like purple, orange, yellow, blue, and green when choosing plates, napkins, and even flowers. Dahlias are the national flower of Mexico and make a great centerpiece for your table.
Play Some Tunes
Although they aren’t technically from Mexico, check out the punk-folk sounds of Mariachi El Bronx on Spotify. Based on a traditional mariachi band, the bands trumpets and strings combine with killer Spanish vocals for a rocking mariachi vibe.
