Is there anything more refreshing during the dog days of summer than delicious watermelon and a chilled cocktail? To celebrate National Watermelon Day, we're combining the two with this Watermelon Basil Mojito recipe that will have you relaxing on the porch after enjoying the sun, or wowing your backyard BBQ guests. It's easy to make, and takes the edge of the summer heat!
Watermelon Basil Mojito Recipe
½ cup basil leaves, washed
½ cup turbinado sugar
2 cups seedless watermelon chunks
½ cup mint leaves, washed
Juice of 1 lime
2 jiggers (3 ounces) white rum
For Basil Simple Syrup: In a small saucepan over medium heat, combine ½ cup water, basil and sugar. Bring to a simmer, stirring occasionally, just until sugar has dissolved. Remove from heat and allow to cool completely. Pour through a strainer to remove basil. Can be kept for up to 2 months refrigerated in a resealable container.
In a blender, add watermelon chunks and puree. Set aside.
Divide mint and lime juice between two tall glasses (we used tall mason jars). Add 1 tablespoon Basil Simple Syrup to each glass. Using the back of a spoon, crush the mint with the liquid. Add equal parts watermelon and a jigger of rum to each glass. Fill glasses with ice and top off with seltzer. Stir to combine.
