You probably learned this mnemonic device in elementary school as a way to remember the order of the rainbow. Today’s lesson features food, which comes in all colors, each with its own nutritional value. Don’t worry, we won’t give you a pop quiz at the end! ;)
Examples: Tomatoes, Watermelon, Strawberries, Peppers, Cherries, Raspberries, Cranberries
Nutritional Value: Red foods contain lycopene, which has antioxidants that help prevent cancer. They also contain beta carotene and Vitamin A, which help with skin, vision and mucus membrane health.
Examples: Carrots, Oranges, Tangerines, Peaches, Cantaloupe, Mangos, Sweet Potatoes, Squash, Peppers, Pumpkin, Nectarines, Bananas, Pineapples
Nutritional Value: Orange and yellow foods contain high Vitamin C levels which help boost your immune system, promote collagen formation (rebuilds the skin) and aid cardiovascular health. They also contain high amounts of carotene and Vitamin A which both help restore vision.
Examples: Broccoli, Kale, Avocado, Green beans, Peppers, Kiwi, Spinach, Arugula, Cabbage, Asparagus, Collards, Grapes
Nutritional Value: Dark greens are rich in antioxidants which remove free radicals from the body before they become harmful. They are also rich in fiber and Vitamins C and K.
Examples: Blueberries, Cherries, Grapes, Plums, Purple Cabbage, Dark Chocolate, Red Wine
Nutritional Value: Purple and Blue foods are high in flavonoids which help maintain proper brain function and blood flow. They also contain anthocyanin which aid in preventing cancers.
