3 Bright and Easy Side Salads

Written by Terra | Fri, Aug 19, '16

Don’t get stuck in a salad rut as summer comes to a close! This time of year, salads benefit from fresh seasonal ingredients like corn, arugula, radishes, kale, and apples. In a plant-strong diet, the salad plays an important role as a side to you meal’s protein. Including an easy to make side salad with your meal helps you feel full and gives you a good source of important vitamins and minerals. Here are three of our favorite Terra’s Kitchen meals that include unique side salads.

1.) Grilled Chicken with Radish Apple Salad - This salad will surprise you with the spicy jalapeno combined with the simple sweetness of apples. If you're following a Paleo eating plan, this salad is compliant if you omit the goat cheese.

2.) Grilled Strip Steak with Corn and Radish Salad - A customer recently told us that this was the perfect summer salad to make over and over -- and we agree! The pop of color brightens up any dish, and since it's made with easy-to-find ingredients like corn and radish, you'll find this salad fitting into your dinner rotation.

3.) Roasted Brown Sugar Salmon with Orange Jicama Salad - It isn’t obvious at first glance, but this side salad combines some unexpected flavors! You wouldn’t expect your green salad to include mint, fennel, and jicama, plus the bright orange in the dressing and toasted almonds on top. Don’t be afraid to combine complementary flavors and use all of that fresh mint in your garden!
