You may have heard of #TacoTuesday, but today we're celebrating Sweet Potato Tuesday! Sweet potatoes are an excellent source of vitamin A which is great for the skin. They're also a good source of vitamin C, vitamin B6, potassium and more! Peak season is just about to begin which is why we challenged ourselves to develop three vegetarian recipes using sweet potatoes as the star ingredient.
This recipe screams fall and works a make ahead lunch as long as you keep the dressing on the side. Cook your sweet potatoes and quinoa ahead of time whenever you do your meal prep and you can enjoy this recipe chilled or hot. The quinoa makes this recipe an excellent source of protein, so make this for #MeatlessMonday or any day and know you're getting everything you need in a beautiful bowl.
We adapted one of our recipes that usually calls for butternut squash to use sweet potatoes instead. The browned butter sauce suits using either vegetable and you can order both prepped sweet potatoes and whole wheat penne pasta from our a la carte menu.
