The grass-fed trend is positive because it maximizes animal welfare (by ensuring that cattle are not in cramped feedlots) while delivering a superior tasting product. Grass-fed cows are only fed grass and forages from weaning until harvest, allowing them to feed themselves using their natural instincts. As a comparison, conventional cattle in the industrial agriculture system spend at least the last 120 days prior to harvest in feedlots and are almost always administered antibiotics to ensure they do not get sick. 
This type of beef is more flavorful, healthier, and better for the environment than conventional beef, which is why we are proud to serve only grass-fed beef on our menu. In addition to being grass-fed, our beef (like all of our other meats) is hormone- and antibiotic-free. Grass-fed cows do not need the antibiotics given to conventional cattle because of the environment in which they are raised. We also only work with suppliers who raise their beef cleanly and humanely.
