"Polished in a Pinch:" Watermelon for Breakfast, Lunch and Dessert

Watermelon Watermelon Watermelon RindIn the time it takes me to rap that verse I can have 20 ounces of watermelon spears cut! Well with a little help from Terras Kitchen I can. This week with our fun series,
Polished in a Pinch, I decided to take those 20 ounces of watermelon and use them throughout my week for a delicious twist on breakfast, lunch and dessert. Now if I could just get that verse out of my head. Watermelon Watermelon Watermelon Rind! 
Watermelon Mint Bagel Spread
Serves 2
What you need:
3 ounces cream cheese, softened
4 mint leaves, finely chopped
pinch of coarsely ground black pepper
2 Everything bagels, cut and toasted (sub any of your favor
ite breakfast toasts)
What to do:
In a mixing bowl, stir together the cream cheese, watermelon, mint and pepper. Smear on your favorite breakfast toasts, bagels or apple slices!
Crispy Salmon with Watermelon Salsa
Serves 2
What you need:
Canola oil
Flake sea salt
Coarsely ground black pepper
.4 ounces cilantro, chopped
.15 ounce mint, chopped
.7 ounce jalapeno, finely diced
2 ounces finely diced red onion
1 lime, juiced
What to do:
Pat salmon dry and liberally season with salt and pepper.
Place a heavy skillet, or grill pan over medium heat, until hot. Add 2 tablespoons canola oil When oil starts to shimmer, place salmon in the pan (skin side down). Cook without moving for 3 minutes then flip over. Continue cooking until just cooked through the center (about 3 minutes).
In a medium mixing bowl, stir together the watermelon, cilantro, mint, jalapeno, red onion and lime juice. Salt and pepper to taste.
To Serve: Spoon watermelon salsa over salmon.
Note: The salsa is great spooned over any fish, chicken and thinly sliced grilled hanger steak.
Easy Chocolate Fondue with Watermelon Dippers
Serves 2
What you need:
6 ounces high quality semi-sweet chocolate, chopped into small pieces
½ cup heavy cream
½ teaspoon vanilla extract
10 ounces watermelon, cut into large cubes
What to do:
In a small pot over low heat, add the chocolate and heavy cream. Cook, stirring occasionally, until the chocolate is smooth (add a little extra cream if the mixture is too thick). Stir in the vanilla.
While the chocolate is melting, add a watermelon cube to the end of each skewer.
Place warm chocolate in the middle of the table, dip watermelon skewers
in the chocolate and try not to smile!
Note: Try other fruit dippers like pineapple, apple slices, pear slices or kiwi.
