Whenever I’m eating a really superb salad, I almost always say to myself, “I would eat a salad every day if it tasted like this!” Lately, I’ve been enjoying some serious salads on my own (okay, with the help of Terra’s Kitchen) and here’s why: simple salad dressings.
While they aren’t technically the star of the dish, these homemade salad dressings stand out, and better yet, they won’t counteract the healthiness of your meal.
Here are my favorites:
1.)Strawberry Jalapeno Vinaigrette -Easy. Sweet. Spicy. Delicious. This vinaigrette will not disappoint with its combination of jalapeno, shallots, strawberry preserves, vinegar, olive oil and water. A quick whisk, and you are enjoying the perfect summer salad (with a kick).
2.) Scallion Mint Dressing in the KeenWOW Bowl - I will be the first to admit that I wasn’t completely sure about this combination of lemon, mint scallions, lemon juice, olive oil, salt and pepper, but once I blended it up and poured it over the quinoa and spinach in my Happy Chicken Bowl, I achieved a level of happiness I never thought possible on a Monday.
3.) Creamy Mango Lime Dressing in the Rainbow Salad - This salad dressing has a goat cheese base, let’s start there. The recipe calls for using both the zest and juice from a lime, and some mangoes. The goat cheese gives the dressing it’s creaminess, water the right consistency, cayenne pepper for heat, and salt and pepper to taste. This dressing made me forget that I was eating spinach underneath that smooth mangoey goodness!
