Directions:Terra's Kitchen's Watermelon Basil Mojito Recipe

For Basil Simple Syrup: In a small saucepan over medium heat, combine ½ cup water, basil and sugar. Bring to a simmer, stirring occasionally, just until sugar has dissolved. Remove from heat and allow to cool completely. Pour through a strainer to remove basil. Can be kept for up to 2 months refrigerated in a resealable container.

For Drinks:

In a blender, add watermelon chunks and puree. Set aside.

Divide mint and lime juice between two tall glasses (we used tall mason jars). Add 1 tablespoon Basil Simple Syrup to each glass. Using the back of a spoon, crush the mint with the liquid. Add equal parts watermelon and a jigger of rum to each glass. Fill glasses with ice and top off with seltzer. Stir to combine.

Pro Tip: How about these other uses for your leftover Basil Simple Syrup!

  • Sweetening a smoothie.
  • Drizzling over a morning pancake.
  • Drizzling over a bowl of cottage cheese and tomatoes for lunch.
  • Sweetening a glass of freshly squeezed lemonade, limeade, iced tea or a fun cocktail.
