Why You Should Eat Vitamin C

 Most of us think of Vitamin C as the super antioxidant; and while this may be true, Vitamin C packs so much more. Vitamin C not only helps protect our bodies from oxidative stress and free radicals, but it is also helps to combat premature skin aging!

Roles of Vitamin C:

Skin Health – Vitamin C assists in the production of collagen; a protein that is a main component of connective tissue. It can also help combat free radicals which can lead to accelerated aging. There is also research to suggest that consuming an adequate intake of Vitamin C is associated with less dryness of the skin and wrinkles [1]. 

Cardiovascular Health – Vitamin C is an important component when it comes to vasodilation (dilation of the blood vessels) which helps to increase blood flow. Some studies also suggest that Vitamin C plays an important role in helping to slow the progression of hardening of the arteries (also known as arthrosclerosis) [2].

Immune Health – Vitamin C is most popularly known for its antioxidant properties.  The antioxidant known as Ascorbic Acid (aka Vitamin C) helps to combat free radicals. Free Radicals can cause damage to our cells. Vitamin C also helps to increase white blood cells whose main function is to fight against pathogens and infections.

Mental Health – Vitamin C plays an important role in the production of certain neurotransmitters; specifically norepinephrine and serotonin. These two neurotransmitters help to regulate our mood, sleep, and many other functions.

So as you can see, getting an adequate amount of Vitamin C is important in more ways than one. Luckily, Vitamin C is found is many of our most favorite foods! One of our favorite foods that is packed with Vitamin C is strawberries! Just one cup of strawberries contain approximately 133% of our daily requirement of Vitamin C. Not only do strawberries taste great on their own, but they're also a great addition to salads, marinades, smoothies, jams; you name it! Adding strawberries to your meals, or even just using them as a snack, can easily help you get your daily requirement of Vitamin C.
